COURSE DESCRIPTION
Description:
Introduces practical applications of artificial intelligence (AI) across the food value chain, including product development, food safety and quality, manufacturing operations, supply chain logistics, sustainability, and consumer engagement. Emphasizes AI workforce literacy, critical evaluation of AI outputs, bias and limitations, data privacy, and responsible use in regulated environments. Students analyze industry-inspired case studies and complete a project pitch proposing an AI-enabled solution. No coding or prior data analytics skills required.
